Ingredients

  • Tomatoes - 3-4 Medium size
  • Garlic - 5-6 cloves
  • Ginger - 1 inch piece
  • Bay leaf - 1
  • Spinach - 250 g
  • Butter - 2 tbsp
  • All purpose flour / Maida - 1 tsp
  • Salt to taste
  • Freshly ground black pepper - 1/2 tsp
  • Ghee - 1 tsp
  • Cumin seeds - 1/2 tsp

Instructions

  1. Wash the tomatoes and make a cross section on the top.
  2. Wash the spinach thoroughly under running water.
  3. Heat 3-4 cups of water in a large pot.
  4. Once the water comes to a boil, add the tomatoes, garlic, ginger and bay leaf.
  5. Cook for 2-3 minutes.
  6. Add the spinach in the pot and cook for another 2-3 minutes.
  7. Remove from heat and let the tomato and spinach cool.
  8. Strain the mixture, discard the bay leaf and keep the water to be used in the soup later.
  9. Blend the tomatoes, spinach, ginger and garlic in a blender to make a smooth puree.
  10. Heat butter in a pan.
  11. Add flour and fry till it turns light brown.
  12. Add the puree and the water we got after boiling the vegetables.
  13. Cook for 2-3 minutes.
  14. Season with salt and pepper.
  15. Add more water if you want a thinner short.
  16. Heat ghee in a pan.
  17. Once the ghee is hot, add cumin seeds and let them crackle.
  18. Pour the ghee over the short.
  19. Sprinkle some pumpkin seeds on top.
  20. Serve piping hot along with soup sticks or Bread slices.
