Ingredients

  • 2 tbsp Olive oil
  • 2 tsp Ginger Chopped
  • 2 tsp Garlic Chopped
  • 1/2 cup Onion Chopped
  • 2 cups Tomato Chopped
  • 2 cups Vegetable stock
  • 1 inch Beet root
  • 3-4 leaves Fresh basil
  • Salt to taste
  • 1 tsp Freshly ground black pepper

Instructions

  1. Heat olive oil in a pan.
  2. When the oil is hot, add ginger and garlic and fry for a few seconds.
  3. Add onion and fry till translucent.
  4. Add tomato, beetroot and vegetables stock and cover the pan.
  5. Cook for 15-20 minutes on medium heat.
  6. Remove the pan from heat and let the mixture cool.
  7. Blend the mixture in a blender along with basil leaves to make a smooth puree.
  8. Heat the soup again in the pan for a minute.
  9. Add salt and black pepper and cook for another minute.

  10. Garnish with basil leaves.

  11. Serve hot.
