Ingredients

  • 4 tbsp Olive oil
  • 2 tsp Garlic Finely chopped
  • 1 cup Onion Chopped
  • 1 and 1/2 cup Rice
  • 1 Jalapeno pepper Chopped
  • 1/4 cup Red bell pepper Chopped
  • 1/4 cup Yellow bell pepper Chopped
  • 1/4 cup Peas
  • 1/4 cup Corn
  • 1/4 cup Carrot Chopped
  • 1/2 cup Tomato puree
  • 3 cups Chicken or veg stock
  • Salt to taste
  • 1/2 tsp Black pepper powder
  • 1/2 tsp Cumin powder
  • 1/2 tsp Paprika

Instructions

  1. Heat olive oil in a large pan.
  2. Once the oil is hot, add garlic and onion and fry till onion turns pinkish.
  3. Add the rice and fry for 3-4 minutes, until it absorbs the oil.
  4. Keep stirring gently.
  5. Add Jalapeno pepper, bell peppers, peas, corn and carrot and cook for 2-3 minutes.
  6. Add tomato puree, salt, pepper powder, cumin powder and paprika along with 3 cups of stock.
  7. Cover the pot and cook the rice on low heat till done.
  8. Remove from heat and cook for 5 minutes.
  9. Fluff the rice with a fork.
  10. Serve hot.
