Ingredients

  • 2 tbsp Ghee
  • 10-12 Almonds Crushed
  • 10-12 Cashew nuts Crushed
  • 2 cups Lauki/Bottle gourd Grated
  • 1 litre Full cream milk
  • 10-12 strands Saffron
  • 1/4 cup Sugar
  • 1 tsp Cardamom powder
  • Almond and pistachio slivers.

Instructions

  1. Heat ghee in a pan.
  2. Fry almonds and cashew nuts till slightly browned.
  3. Add the grated Lauki and fry for 5-6 minutes on low heat until it is softened.

  4. Add milk in the pan.

  5. Once the milk starts to boil, simmer the heat and let the kheer thicken.

  6. Add the saffron in the milk and cook on low heat for 20-25 minutes.
  7. Keep stirring in between.
  8. Once the kheer has thickened to the desired consistency, add cardamom powder and sugar.
  9. Cook for another 3-4 minutes.

  10. Garnish with almond and pistachio slivers and rose petals.
  11. Serve hot or chilled.
