Chickpea, Avocado and Feta Salad

Ingredients

  • Chickpea - 1/2 cup
  • Avocado - 1 cup peeled and Chopped
  • Parsley - 2 tbsp Chopped
  • Onion - 1/4 cup Chopped
  • Feta cheese - 50 g
  • Lemon juice - 2 tsp
  • Salt to taste

Instructions

  1. Wash the chickpea and soak them in enough water for 4-5 hours.
  2. Drain the water and add the chickpeas in a pressure cooker.
  3. Add 2 cups of water and 1 tsp salt and pressure cook the chickpeas till done.
  4. Remove the pressure cooker from heat and let the pressure release.
  5. Drain the excess water and add the chickpeas in a mixing bowl.
  6. Let the chickpeas cool.
  7. Add avocado, parsley, onion, feta cheese, lemon juice and salt in the chickpeas.
  8. Mix gently.
  9. Serve chilled or at room temperature.
