Ingredients

  • For the dough
  • Whole wheat flour - 2 cups
  • Vegetable oil - 2 tsp
  • Salt - 1/2 tsp
  • For the filling
  • Broccoli - 1 and 1/2 cup grated
  • Boiled potato - 1/2 cup grated
  • Paneer / Indian cottage cheese - 1/2 cup grated
  • Ginger - 1 tsp grated
  • Salt to taste
  • Black pepper powder - 1/4 tsp
  • Roasted cumin powder - 1/2 tsp
  • Fresh coriander - 2 tbsp
  • Green chili - 2 tsp chopped
  • Oil for frying

Instructions

  1. For the dough
  2. Mix whole wheat flour, oil and salt in a bowl.
  3. Add water and make a soft dough.
  4. Cover and keep aside for 20 minutes.
  5. For the filling
  6. Mix all the ingredients in a bowl and keep aside.
  7. To make Paratha
  8. Divide the dough into 6 - 8 equal balls.
  9. Take a ball and dust it slightly.
  10. Roll it from the edges.
  11. Keep the center a little thicker.
  12. Take 2 tbsp of filling and keep it in the center of the dough.
  13. Bring the edges together and seal them.
  14. Dust the ball again and very gently roll to make a 5-6 inch circle.
  15. Heat a griddle and when it is hot, put the paratha on the griddle.
  16. Cook from one side till brown spots appear.
  17. Flip on the other side.
  18. Apply oil on both the sides and cook till spots darken a bit.
  19. Serve hot with pickle and curd.
