Ingredients
All purpose flour - 1 cup
Baking powder - 1 and ½ tsp
Almond powder - ½ cup
I ground the almonds in a blender with the skin on. You can use almond meal as well
Salt - ¼ tsp
Eggs - 3
Granulated sugar - ¾ cup
Vanilla extract - ½ tsp
Almond extract - ¼ tsp
Extra virgin olive oil - ½ cup
Milk - ½ cup
Lemon juice - 2-3 drops
Zest of one lemon
For the glaze
Confectioner's sugar - 1 cup
Lemon juice - 2 tsp
Milk - 1 tbsp
Unsalted butter - 1 tbsp

Instructions
Pre heat the oven to 180 degree C.
Grease and line an 8 inch pan.
Mix all purpose flour, baking powder, almond powder and salt in a bowl.
Keep aside.
Mix milk and lemon juice in another bowl.
Keep aside.
Whisk egg and sugar in another bowl.
Add vanilla and almond extract and whisk well.
Add olive oil and milk and lemon juice mixture and mix till combined.
Add the dry ingredients and mix till combined.
Do not over mix at this stage.
Pour the batter in the prepared pan.
Bake for 20-25 minutes, till a tooth pick comes out clean.
Let the cake in the pan for 5 minutes.
Remove the cake from the pan and cool on a wire rack till completely cooled.
For the glaze
Mix all the ingredients in a bowl till smooth and shiny.
Pour the glaze over the cooled cake.
