French Breakfast Muffins

Ingredients

  • Unsalted butter - 75 gm
  • Powdered sugar - 1/2 cup
  • Egg - 1
  • All purpose flour - 1 and 1/2 cup
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Nutmeg powder - a pinch
  • Milk - 1/2 cup
  • Vanilla extract - 1/2 tsp
  • Melted butter - 1/4 cup
  • Granulated sugar - 1/4 cup
  • Cinnamon powder - 1/2 tsp

Instructions

  1. Pre-heat the oven to 180 degrees C.
  2. Grease or line a muffin tray.
  3. In a bowl, sift all purpose flour, baking powder, salt and nutmeg.
  4. Beat butter and sugar in bowl till light and fluffy and pale in color.
  5. Add the egg and mix well.
  6. Add 1/2 of the flour and mix.
  7. Add the milk and mix.
  8. Add vanilla extract and mix.
  9. Add the remaining flour and mix till the mixture comes together. ( Do not over mix at this stage )
  10. Pour the batter int the muffin cups until they are 2/3rd full.
  11. Bake until golden brown. ( Approx 20-25 minutes )
  12. While the muffins are baking, heat the melted butter.
  13. In a small bowl, combine the sugar and cinnamon powder.
  14. When the muffins are done, remove them from the pan and roll the top in the melted butter.
  15. Immediately roll them in the cinnamon sugar.
  16. Serve warm.
