Lavash Crackers with Roasted Red Bell Pepper Hummus

Ingredients

  • For roasted red bell pepper hummus
  • Red bell peppers - 2
  • Chickpeas - 1/2 cup soaked for 5-6 hours and then boiled till soft
  • Sesame seeds - 2 tbsp
  • Garlic - 8-10 cloves
  • Olive oil - 1/4 cup
  • Lemon juice - 3 tbsp
  • Roasted cumin powder - 1/4 tsp
  • Salt to taste
  • Red chili powder - 1/2 tsp
  • For the lavash crackers
  • Bread flour - 1 and 1/2 cup If bread flour is not available, use 1 and 1/2 cup all purpose and 1 tbsp vital gluten
  • Salt - 1 tsp
  • Yeast - 1/2 tsp
  • Sugar - 1 tbsp
  • Olive oil - 1 tbsp
  • Water - 1/2 cup normal and 2 tbsp ( warm )
  • Sesame seeds   black and white for topping

Instructions

  1. For roasted red bell pepper hummus
  2. Wash the bell peppers and wipe with a kitchen towel.
  3. Apply oil on the skin of the bell peppers.
  4. Heat the oven to 180 degree C .
  5. Line a baking tray with aluminium foil and roast the bell peppers till their skin turns black.
  6. Rotate the peppers a few times during roasting.
  7. Remove the peppers when done.
  8. Remove the skin and and seeds of the peppers.
  9. In a blender, blend roasted peppers, boiled chickpeas, sesame seeds, garlic, olive oil, lemon juice, roasted cumin powder, salt and red chili powder to make a smooth paste.
  10. Add little water if required.
  11. Transfer in a bowl.
  12. Drizzle some olive oil on top.
  13. Sprinkle chili flakes.
  14. For the lavash crackers
  15. Mix yeast with 1/2 tsp sugar and 2 tbsp warm water.
  16. Let it rest for 5 minutes.
  17. Mix bread flour, salt, remaining sugar and olive oil in a bowl.
  18. Add the yeast mixture and remaining water and knead to make a dough.
  19. Transfer the dough on a work surface and knead for 10-12 minutes.
  20. Oil a big bowl and transfer the dough in the bowl.
  21. Cover and keep aside for 90 minutes.
  22. Pre heat the oven to 180 degree C.
  23. Transfer the dough on the work surface.
  24. Gently punch it and knead it for 10 seconds.
  25. Divide the dough into 4 parts.
  26. Lightly dust the surface and roll the dough into a very thin rectangle. ( Try to roll your dough paper thin. If the dough is not thin the crackers will not come out crispy )
  27. You can also use a pasta maker to roll your dough.
  28. Cut into triangles.
  29. Lightly brush the crackers with water and sprinkle sesame seeds on top.
  30. Bake for 10-12 minutes, until slightly browned from top.
  31. Remove from oven.
  32. Cool for 10-12 minutes.
  33. Store in an airtight container.
