Doughnuts

Ingredients

  • For the doughnut
  • Instant yeast - 2 and 1/4 tsp
  • Warm milk - 1 cup
  • All purpose flour - 3 cups
  • Sugar - 1/4 cup
  • Egg - 1
  • Salt - 1/4 tsp
  • Nutmeg powder - 1/4 tsp
  • Unsalted butter - 2 tbsp melted
  • Vanilla extract - 1/2 tsp
  • Vegetable oil for frying
  • For the glaze
  • Milk chocolate - 60 g
  • Butter - 60 g
  • Fresh cream - 2 tbsp
  • Confectioner's sugar - 1 cup
  • Vanilla extract - 1/2 tsp
  • Sprinkles to garnish

Instructions

  1. For the doughnuts
  2. Mix all the ingredients of doughnut in a bowl.
  3. Mix with a wooden spoon till everything comes together.
  4. Take out the dough on a lightly floured surface and knead for 10-12 minutes or if using a stand mixer, knead at medium speed for 6-7 minutes.
  5. Lightly oil a bowl and transfer the dough in it.
  6. Keep the bowl in a warm place for 2 hours till the dough doubles in size.
  7. Gently punch the dough and take it out on a lightly floured work surface.
  8. Roll the dough to 1/4 inch thickness.
  9. Cut the doughnuts. ( I used a big cookie cutter and cap of a bottle to cut mine )
  10. Keep the doughnuts on a baking sheet leaving a gap of 1/2 inch between them.
  11. Cover the sheet with a kitchen towel and let the doughnuts rise for another hour till they double in size.
  12. Heat oil in a big vessel.
  13. When the oil is hot ( approx 180 degree C ), place the doughnuts in it and fry from both the sides till lightly browned. ( do not over fry the doughnuts or they will become dry )
  14. Drain on a kitchen towel lined tray.
  15. For the glaze
  16. Melt chocolate and butter in a pan.
  17. Cool for 5 minutes.
  18. Add confectioner's sugar, vanilla extract and cream and mix well.
  19. Dip the doughnuts in the glaze and sprinkle the sprinklers on top.
  20. I also used some left over ganache for a few doughnuts which also tasted yum.
