Upside Down Plum Cake

Ingredients

  • For the topping
  • Unsalted butter - 50 gm
  • Brown sugar - 1/2 cup
  • Mix fruit jam or any jam of your choice - 3 tsp
  • Plums - 1/2 kg seeds removed and cut into slices
  • For the cake
  • All purpose flour - 1 cup
  • Almond flour - 1/2 cup
  • Baking powder - 1 tsp
  • Baking soda - 1/4 tsp
  • Salt - 1/4 tsp
  • Unsalted butter - 100 gm
  • Sugar - 1 cup
  • Eggs - 2
  • Yogurt - 1/2 cup
  • Vanilla extract - 1 tsp

Instructions

  1. Grease and line an 8 inch pan
  2. In a pan, heat butter, sugar and jam
  3. Cook on low heat till sugar has dissolved and jam has melted
  4. Pour the topping in the prepared pan
  5. Let it cool completely
  6. When it is completely cooled, arrange the plum slices on top
  7. Pre heat the oven to 180 degrees C
  8. Mix all purpose flour, almond flour, baking powder, baking soda and salt in a bowl
  9. Beat sugar and butter in a bowl till light and fluffy
  10. Add eggs and beat well
  11. Add yogurt and vanilla extract and beat for half minute
  12. Add flour gradually and mix till combined
  13. Pour the batter over the plums and bake for 40-45 minutes, until a knife comes out clean
  14. Remove from the oven and cool for 5 minute in the pan
  15. Remove from the pan
  16. Dust with powdered sugar
  17. Serve warm
