Holi cake (For the Festival of Colours)

  • All purpose flour-1 cup
  • Baking powder-1 tsp
  • Baking soda-1/2 tsp
  • Sugar-1 cup
  • Eggs-3
  • Butter-1/2 cup
  • Vanilla extract-1 tsp
  • Food colors-I used yellow green, magenta, and blue
  • For Soaking syrup
  • Water-1/2 cup
  • Sugar-1/2 cup
  • Vanilla extract-1 tsp
  • For Frosting
  • Whipping cream-3 cups
  • Confectioner's sugar-1cup
  • Vanilla extract-1 tsp


  1. Pre-heat the oven to 180 degree C
  2. Grease and line an 8" pan
  3. Mix all purpose flour, baking powder and baking soda and keep aside.
  4. Beat egg and sugar until light and fluffy ( approx 2-3 minutes)
  5. Add butter and whisk well
  6. Add flour and vanilla extract and mix well
  7. Divide the batter in 4 parts in separate bowls
  8. Add one food color to each bowl and mix well
  9. Pour the batter from one bowl in the centre of the pan
  10. Pour batter from another bowl on top of the first batter
  11. Keep pouring the batter on top of the previous batter until you are out of batter
  12. Tap the pan on the slab once
  13. Bake for 30-35 minutes
  14. Cool the cake in the pan for 5 minutes
  15. Take out from the pan and cool on a cooling rack
  16. Soaking syrup:
  17. Mix all the ingredients and cool
  18. Whipped cream:
  19. Add all the ingredients in a bowl and whip till cream forms stiff peaks
  20. Assembly:
  21. When the cake is cooled, cut it into half
  22. Brush one half with half of the soaking syrup and spread 1 cup of whipped cream on top of it
  23. Cover with the other half
  24. Brush with the remaining soaking syrup
  25. Cover with a layer of frosting ( this is called crumb coat )
  26. Decorate the cake with the remaining cream
  27. I have divided the cream in 4 parts and colored it with different colors and use it for frosting the cake
