Sama ki Katli is a gluten free dish made using barnyard millet flour or sama ke chawal as they are popularly called in North India.

Ingredients

  • 1 cup Sama Rice Flour
  • 1 cup Curd
  • 1/2 cup Boiled Potatoes Grated
  • 1 cup Water
  • 1 tsp Ghee
  • 1 tsp Cumin Seeds
  • 2 tsp Green Chilli Chopped
  • 1 tsp Ginger Grated
  • Salt to taste
  • 2 tbsp Green Coriander Chopped

Instructions

  1. Mix Sama Chawal flour, boiled potato and curd in a bowl and keep aside for 30 minutes.

  2. Heat ghee in a pan.

  3. Once the ghee is hot, add cumin seeds, chilli and ginger and fry for a minute.

  4. Add the flour and curd mixture, water and salt.

  5. Cook for 10-12 minutes on medium low heat until the mixture starts to leave the sides of the pan.

  6. Keep stirring continuously.

  7. Grease a plate with ghee and transfer the mixture in the greased plate.

  8. Spread the mixture evenly on the plate and keep aside for 15 minutes to set.

  9. Invert the plate and remove the katli from the plate.

  10. Cut into desired shape.

  11. Heat ghee on a tawa and fry the katli until golden brown from both the sides.

  12. Garnish with fresh coriander and serve hot with Vrat ki Chutney.
