Ingredients

  • 2 cups Broccoli Cut into small florets
  • 2 cups Apple Cut into cubes
  • 1/4 cup Dried Cranberries
  • 1/4 cup Onion Chopped
  • 1/2 cup Carrots Chopped
  • 1/2 cup Roasted Pecans Chopped

For the dressing

  • 3 tbsp Extra Virgin Olive Oil
  • 1 tsp Lemon Juice
  • 1/2 tsp Lemon Zest
  • 1 tbsp Apple Cider Vinegar
  • 2 tbsp Honey
  • 1/2 tsp Salt
  • 1/4 tsp Freshly Cracked Black Pepper

Instructions

  1. Bring a pot of water to a boil.

  2. Add 1 tsp salt and broccoli florets in the boiling water.

  3. Cook for 2-3 minutes.

  4. Drain the water and transfer the broccoli in a pot with ice cold water to stop cooking.

  5. Toss together all the salad ingredients in a bowl.

  6. Mix the dressing ingredients in another bowl.

  7. Pour the dressing over the salad and mix well.

  8. Serve immediately.
