Ingredients

  • 2 Boneless Chicken Breast
  • 2 tbsp Gochujang
  • 1 tsp Gochugaru
  • 2 tbsp Vegetable Oil
  • 2 tbsp Soy sauce
  • 1 tbsp Brown Sugar
  • 1 tsp Ginger Grated
  • 1 tsp Garlic Minced
  • 2 cups Mixed Vegetables I used Bell Peppers, carrots and Broccoli
  • 2 tbsp Scallion Chopped

Instructions

  1. Cut the chicken breasts into half horizontally to reduce their thickness.

  2. Add all remaining ingredients in a bowl except scallion and vegetables and toss well to coat the chicken pieces with the marinade.

  3. Refrigerate the chicken for at least 2 hours or for max of 2 days.

  4. Pre heat the oven to 400 degrees F.

  5. Spread the vegetables on a sheet pan on one side.

  6. Arrange the chicken pieces on the sheet pan.

  7. Drizzle the leftover marinade over the vegetables and toss gently.

  8. Grill for 25-30 minutes until the chicken pieces are slightly charred.

  9. Garnish with scallions and serve hot with steamed rice.
