This Easy Homemade Strawberry Cobbler comes together using simple ingredients in under 10 minutes of active working time. Make it for a get-together, house party, or after-meal dessert.
Start by preparing the strawberries. Wash them with water to remove any dirt and then chop off the top part with the green leaves. Now chop the strawberries into small pieces. If using frozen strawberries, thaw them to room temperature. Then chop them.
Preheat the oven to 180℃ (360℉).
Grease an 8×8 inch baking tray with butter.
Make The Topping
Stir together all-purpose flour, sugar, vanilla extract, baking powder, salt, butter, and milk in a medium-sized mixing bowl until smooth.
Set aside.
Assemble The Cobbler
Add the chopped strawberries to the prepared baking tray.
Add sugar, lemon juice, and cornstarch to the tray and mix well using a spoon.
Pour the topping over the strawberries and spread evenly using a spoon.
Bake The Cobbler
Keep the baking tray in the middle rack of the oven and bake for 30-35 minutes until the top is lightly browned and crispy.
The ready cobbler will have the dough rising to the top to form a gorgeous crust and gooey strawberries popping through.
Remove the pan from the oven.
To serve, scoop out a large spoonful of warm cobbler and transfer it to a serving bowl. Top with a scoop of vanilla ice cream and serve immediately.
Use fresh strawberries for the best result. If not, then you can opt for frozen ones. You can also make a thicker crustby increasing the topping quantity. I sometimes double the quantity of the topping ingredients for a thicker crust. This recipe can be easily doubled or tripled. So, if you are making it for a large get-together, this one is for you. Use a larger baking tray if you are scaling the recipe.
