Aloo Gobi

Aloo Gobi is a spicy Indian potato and cauliflower stir fry. It is a vegan, gluten free dish which can be enjoyed with any Indian style bread. Here is how to make Aloo Gobi Recipe.

Ingredients

  • 4 tbsp Mustard Oil
  • 1 Small Head Cauliflower Cut into small florets
  • 2 Lage Potatoes Peeled and Cubed
  • 1 tsp Cumin Seeds
  • 1/2 cup Onion Chopped
  • 2 tsp Ginger Chopped
  • 3-4 Green Chillies Slit into half
  • 2 tsp Coriander Powder
  • 1/2 tsp Turmeric Powder
  • 2 tsp Kashmiri Red Chilli Powder
  • 1/2 tsp Garam masala Powder
  • Salt to taste
  • 1/2 cup Tomato Chopped
  • 2 tbsp Kasuri Methi
  • 1 tbsp Lemon Juice

Instructions

  1. Heat water in a large pot.

  2. Once the water comes to a boil, add 1/2 tsp turmeric powder and cauliflower in it and cook for a minute.

  3. Drain the water and keep the cauliflower aside.

  4. Heat oil in a pan.

  5. Add cauliflower and potatoes and fry for 5-6 minutes until they are slightly browned.

  6. Remove on a plate.

  7. Add cumin seeds in the remaining oil and let them crackle for a few seconds.

  8. Add onion and fry until it slightly browned.

  9. Now add ginger and green chillies and fry for another 2 minutes.

  10. Add coriander powder, turmeric powder, Kashmiri red chilli powder and garam masala powder and cook for a minute. Add little water if the masala is burning.

  11. Add tomato and salt to taste and cook for 2-3 minutes.

  12. Now add the fried cauliflower and potatoes and mix well.

  13. Cover the pan and cook on low heat until the potatoes are cooked through.

  14. Add kauri methi and lemon juice and mix well.

  15. Serve hot.

Recipe Notes

If you over cook the cauliflower florets, they tends to become soggy which spoils the taste. 

You need to sauté or half cook the cauliflower florets and potatoes before they are steamed. Thereafter, add red chilli powder, garam masala and ginger to impart sharp flavours. 

Add tomatoes at the end. This will make sure the veggies are nicely cooked through.

Add lot of ginger in any cauliflower dish. It helps in better digestion of cauliflower.
