To Cook Pasta

skinless boneless chicken breasts or chicken thighs

g, cut into ½-inch pieces

sausages

g, sliced

Cajun spice mix

tablespoons
extra virgin olive oil

teaspoons
minced garlic

shrimp

g, any size, cleaned and deveined

diced red bell peppers

diced green bell peppers

tomato puree

tablespoon tomato paste

chicken broth

tablespoons
chopped fresh parsley
Instructions
Cook The Pasta
Heat
5
cups of water in a large pot over high heat.
Once the water comes to a boil, add salt and pasta to the pot and stir gently.
Cook for 7 minutes.
Drain the water (reserve
1
cup).
Make Jambalaya Pasta
While the pasta is cooking, mix together chicken, sausages, and cajun spice in a mixing bowl. Keep aside.
Heat oil in a pan over medium-high heat.
Once the oil is hot, add garlic and onions to the pan and sauté for a minute.
Add the chicken and sausages mixed with the cajun spice and saute for 3-4 minutes.
Now add shrimp, red bell peppers, green bell peppers, salt, and black pepper, and mix well.
Add tomato puree and chicken broth to the pan and mix well. Cook for 3-4 minutes, stirring a few times in between.
Add the cooked pasta and mix everything well.
Add some pasta water if the pasta looks dry. Check for salt and add more if required.
Garnish with parsley and serve hot.
