Cajun Fried Corn Recipe

These Southern Cajun Fried Corn are super easy to make and come together in under 30 minutes. Serve them as a side or as an appetizer.

Ingredients
- 3 cups corn kernels fresh or frozen
- 1 tablespoons butter salted or unsalted
- ½ cup chicken stock use vegetable stock for a vegetarian recipe
- 2 teaspoons cajun seasoning
- ¼ teaspoon smoked paprika or to taste
- ¼ teaspoon cayenne pepper powder or to taste
- ½ teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
Instructions
- Heat butter in a skillet over medium heat.
- Once the butter is melted, add chicken stock, cajun seasoning, smoked paprika, and cayenne pepper powder, and mix well.
- Add corn kernels, salt, and pepper and mix well.
- Reduce the heat to low and cover the skillet with a lid.
- Cook for 10-12 minutes until the corn is tender and most of the liquid is absorbed.
- Check for salt and pepper and add more if needed.
- Serve hot.
Notes
This recipe is super versatile. You can add other ingredients like bacon dripping to season it further or add heavy cream for that creamy texture.
Double or triple the recipe if making it for a crowd.
Chicken stock and cajun seasoning have salt in them so be careful while adding any extra salt.
Instead of using frozen corn, you can shuck fresh corn.
Adjust the seasonings as per your taste.
