This Indian Omelette is loaded with veggies and spices and is a perfect breakfast that comes together in under 10 minutes. Serve it with bread, toast, chapati, or paratha for a healthy treat.
Break the eggs in a medium size mixing bowl. Whisk them well using a wire whisk or a fork.
Add onions, tomatoes, green bell pepper, green chili pepepr, cilantro, turmeric powder, red chili powder, milk, and salt to the bowl and whisk well.
Heat an 8-inch non-stick frying pan over medium heat. Add ghee to the pan and spread it all over the pan.
Pour the egg mixture into the heated pan and swirl the pan to spread the eggs evenly. Cook on medium heat until the lower side is set. It will take 2-3 minutes.
Flip the omelette using a flat spatula and cook from the other side as well. Flip again and fold it in half. Serve hot with buttered toast and tomato ketchup.
You can skip adding tomatoes to your omelette if you wish to.Adjust the green chilies according to your taste preference.You can make the omelette in oil but it tastes amazing when made in ghee.
