Schezwan Egg Fried Rice is an Indo-Chinese dish where cooked rice is stir-fried with scrambled eggs, Schezwan sauce, veggies, and a few other Chinese sauces. Make it using my easy recipe.
You can replace white rice with cooked brown rice, couscous, quinoa, broken wheat, cauliflower, etc for a taste change.In case you are cooking fresh rice, then cool it completely before stir-frying, otherwise, it will get mushy. To fasten the cooling process, spread the warm rice on a baking tray and cover the tray with a cling film. Now refrigerate it for 30 minutes or free for 15 minutes.You can also add red or yellow bell peppers, spring onions (scallions), mushrooms, zucchini, broccoli, etc to this recipe.Add chicken or shrimp (prawns) if you want to add extra protein. Adjust the sauces and green chilies as per your taste.
