Kaddu ka Raita or Pumpkin Raita is easy to make accompaniment made using fresh pumpkin, yogurt, and spices and it goes very well with Indian meals. Here is how to make it.
Start by preparing the pumpkin. We need 1 cup of grated pumpkin, so buy approximately 300 grams slice. Wash the pumpkin slice and peel the skin using a sharp knife. Grate it using the medium hole of the box grater. Boil 3 cups of water in a pan.
When it comes to a rolling boil, add 1 cup of grated pumpkin and cook for 4-5 minutes on medium heat.
Strain the pumpkin using a soup strainer and let it cool for some time. You can use the leftover water to knead the dough or add it to the curries.
Whisk 2 cups of yogurt in a medium size mixing bowl using a wire whisk
Add salt to taste, ¼ teaspoon roasted cumin powder, ¼ teaspoon red chili powder, 1 teaspoon chopped coriander, and 1 teaspoon chopped green chili, and mix well.
Add the cooked pumpkin to the bowl and mix well. Garnish with coriander, chilies, and red chili powder.
Serve chilled.

You can adjust the amount of chili as per your taste.You can add some roasted and crushed peanuts to this raita for a nice crunch.
