Avocado Lentil Salad is a tasteful accompaniment that brings in the best flavours of lentils as well as fresh greens. It can be eaten as it is as well!

Ingredients

Masoor Dal / Red Gram

Ripe Avocado
Peeled and Cubed

Salad greens
I used lettuce

Orange
Cut into wedges
For the dressing

tablespoon
Extra virgin olive oil

tablespoon
Orange juice
1
tablespoon
Lemon juice
1
teaspoon
Orange zest
Salt to taste

teaspoon
Freshly cracked black pepper
Instructions
Wash the lentil and add it in a pressure cooker along with some salt and 1 cup of water.
Pressure cook until the lentil is done.
Drain the lentil and let it cool.
Add cooked lentil in a bowl along with avocado, salad greens and orange in a bowl and mix.
Add all the ingredients for dressing in a bowl and mix well.
Pour the dressing over the salad and mix gently.
Serve immediately.
