A creamier yet healthier alternative to the usual white sauce, this Vegan Cauliflower Cheese Sauce lets you devour your comfort food with a lesser guilt!
Add onion and fry until it turns slightly pinkish in colour.
Now add cauliflower florets and saute for a minute.
Add vegetable broth and cover and cook the cauliflower for 7-8 minutes.
Remove the pan from heat and let it cool.
Transfer the ingredients in a blender and blend to make a smooth sauce.
Transfer the sauce back in the pan.
Add milk to thin the sauce as required.
Add cheddar cheese and gouda cheese and cook until the cheese melts and sauce is nice and cheesy.
Now add salt to taste and black pepper and mix well.
Use the sauce as required.
Notes
Cut the cauliflower florets in approximately same size. It will make sure they cook uniformly.Cook the cauliflower florets until the stem turns translucent.Make sure to blend the sauce until is very creamy.You can cook the cauliflower in broth instead of water for added flavour.You can add flavourings of your choice like herbs, chilli flakes etc to the sauce to make it more flavourful.A drizzle of good quality olive oil takes the taste of this sauce to next level.Use any cheese that melts well to make this sauce.
