Ingredients

Peeled and cut into small cubes

Turmeric powder

Amchoor / Dry Mango powder
Instructions
Heat oil in a pan.
When the oil is hot, add heeng, methi, sarson and dry red chili and let them crackle for a few seconds.
Add Kaddu, salt, red chili powder, turmeric powder and coriander powder and mix well.
Cover the pan and cook the kaddu on low heat for 10-12 minutes till done.
Do not over cook otherwise kaddu will turn mushy.
Sprinkle little water if required.
Add gur and amchoor powder and mix well.
Garnish with fresh coriander.
Serve hot with Dal and Chapati or Paratha.
