It is basically grated cucumber whisked in fresh yogurt and flavored with mustard seeds. Here is a simple recipe to make it.

Ingredients

Fresh curd

Grated
Salt to taste

Yellow mustard seeds

teaspoon
Roasted Cumin Powder
½
teaspoon
Red Chilli Powder
½
teaspoon
Turmeric Powder

Green chilli
Chopped

tablespoon
Fresh Coriander
Chopped
Instructions
Coarsely ground the yellow mustard seeds in a mortar.
Mix all the ingredients in a bowl and whisk well.
Keep the Raita for at least 1 hour before serving for the mustard flavor to seep through.
Garnish with 1 teaspoon mustard oil and red chilli powder & serve.
Notes
You can also make a paste of mustard, fresh coriander and green chilli and add it in the curd along with other spices to make this raita.
