Put all the ingredients except bacon and scallion in the slow cooker and cook on low for 6-8 hours.
Once the chicken is cooked, take out the chicken breast on a plate.
Using two forks, shred the chicken.
Transfer the shredded chicken back in the slow cooker and mix everything well
Top with crispy bacon and scallion.
Serve as desired.
To make it in Instant Pot, add all the ingredients in the instant pot. Close the lid and PRESSURE COOK for 10 minutes. Remove the chicken breasts from the pot and shred them. Put them back in the pot and mix with the sauce.
