Wash the broccoli and cut it into large florets. If the florets are too small, they will become mushy.
Add broccoli and cold water to the Instant Pot and close the lid of the pot.
Set the valve to the sealing position. Press PRESSURE COOK and set the timer to zero minutes at HIGH PRESSURE.
It will take 10-12 minutes for the pressure to build up and the timer to start. Once the timer goes off, release the pressure manually immediately by moving the valve to the venting position. Use a kitchen cloth to move the value to avoid steam burn in fingers. If you do not release the pressure immediately, the broccoli will get extra cooked and will become mushy. Once the pressure is released, open the lid.
Drain the broccoli in a colander to discard any water. Season the broccoli with salt, pepper, olive oil and lemon juice and serve warm.
Release the pressure immediately once the timer goes off to avoid overcooking.If the broccoli is still overcooked, cook it on LOW PRESSURE instead of HIGH PRESSURE. Every Instant Pot is different and you will have to change the settings accordingly.This recipe can be doubled or tripled. The cook time remains the same.
