You can use whole wheat flour, for a healthier twist, but the taste and texture will differ a bit.If you want an eggless option, then you can either increase the yogurt quantity or use a flaxseed paste instead of eggs. You can use either red or green apples. If you want it to be nice and sweet, go for red apples such as Gala or Honey Crips and green ones such as Granny Smith if you like that subtle tart flavor. You can even mix the green and red apples to make this apple and yogurt cake. You should peel the apples that you are folding in the batter. Peel, core and finely chop using a sharp knife. The ones you use to top the batter can be used without peeling. To make a gluten-free version, you just need to substitute all-purpose flour with any gluten-free flour that you prefer. In case you substitute it, the taste and texture will differ a bit.
