Keep the sweet potatoes on the trivet and close the lid of the Instant pot.
Press PRESSURE COOK and set the timer to 18 minutes for small potatoes, 20 minutes for medium sized and 25 minutes for large sweet potatoes.
It will take 10-12 minutes for the steam to build and timer to start.
Wait until the timer goes off.
Let the steam release naturally for 10 minutes.
Open the lid of the Instant Pot and take out the cooked sweet potatoes.
Use as required.

Use the sweet potatoes which are similar in size for one lot. The cooking time may vary according to the size of the potatoes and we want even cooking.Do not forget to set the valve to sealing position.Make sure to keep the sweet potatoes on a trivet and not touching the water. We actually want to steam the potatoes so that they are fluffy and not mushy.You can increase the number of potatoes to 4-5 but do not overcrowd the pot.If your sweet potatoes are too large, cut them into half before adding in the Instant pot.The Instant Pot with take 10-12 minutes to build up the steam and start the timer.Set the timer to 18 minutes for small potatoes, 20 minutes for medium sized and 25 minutes for large sweet potatoes.Although I didn't poke the sweet potatoes before putting them in the IP, you can make a few pokes using a fork to make sure they don't burst open.
