Ingredients

mustard oil
or any other cooking oil

fenugreek seeds (methi dana)

dry red chilies
broken into small pieces

chopped garlic

potatoes

Instructions
Peel the potatoes and cut them into ¼-inch thick batons. Soak the potatoes in water until ready to use.
Heat oil in a pan over medium-high heat.
Once the oil is hot, add fenugreek seeds and dry red chilies and fry for 3-4 seconds.
Add chopped garlic and fry for 6-8 seconds.
Add potatoes and mix well.
Add turmeric powder, salt, and black pepper powder and mix well.
Reduce the heat to low.
Cover the pan and cook until the potatoes are cooked (5-6 minutes), stirring a few times.
Once the potatoes are cooked, remove the lid and increase the heat to high. Cook for 2-3 minutes until the potatoes are slightly browned.
Serve hot.
