Chai ka Masala Recipe (Indian Tea Masala Powder)
Chai Ka Masala (Masala Tea Powder, Masala Chai Spice Mix, Chai Masala, Tea Masala) is an Indian spice mix made using whole spices, dried rose petals, and fennel seeds. It is added to Indian milk tea to make it strong and flavorful. Here is how to make it at home.
Servings: 0.75 cup
Equipment
- Grinder or Food Processor
Ingredients
- 25 grams whole cloves (laung)
- 25 grams whole green cardamoms (hari elaichi)
- 25 grams whole cinnamon sticks (dalchini) crushed
- 25 grams whole black peppercorns (kali mirch)
- 2 grams dried rose petals
- 15 grams fennel seeds (saunf)
- 10 grams dry ginger powder (saunth)
- 1 whole nutmeg (jaiphal) crushed
Instructions
- Add all the ingredients to a spice grinder, coffee grinder, or food processor.
- Grind to a coarse powder, like coarse sand or cracked peppercorns, not a fine powder.
- Transfer coarsely ground spices to an airtight container and use as desired.
For an even more robust masala, dry-roast the spices over medium heat for 3-4 minutes before grinding.
It is essential to grind the spices coarsely. If the powder is fine, it will seep into the tea, and you’ll get a mouthful of spice powder.

Notes
Use ½ tsp of this masala tea powder per cup of tea. If you like your tea stronger, you can use more.
Reduce the amount of pepper if you don't like the chai masala powder too peppery.
You can skip any of the ingredients listed if they aren't available or if you don't like them.
