Got a day old rice? Want to revamp it? Make this quick and easy, not too mention uber delicious stir-fried Egg Fried Rice in a skillet or wok in minutes!
Once the oil is hot, add garlic and ginger and fry for a few seconds.
Add onion and celery and fry for 10-15 seconds.
Add carrot, corn, capsicum and cabbage and saute for a minute.
Move the vegetables to the side of the pan and pour the eggs in the pan.
Cook until eggs are scrambled and cooked.
Mix everything up.
Add soy sauce, red chilli paste, rice vinegar, sesame oil and salt.
Add cooked rice, white pepper powder and salt and mix well.
Cook for a minute on high heat.
Garnish with spring onion greens.
Serve hot.

This recipe works best with day old rice. If you don't have leftover rice, make the rice fresh and refrigerate it for a few hours. It will make sure the final dish doesn't turn mushy and the rice grains are separate.You can use brown rice instead of white rice to make this recipe. Quinoa also works great in this recipe.You can even use cauliflower rice (coarsely ground cauliflower) to make cauliflower fried rice. Just swap the white rice with cauliflower rice. Add beef, chicken, shrimp, crispy bacon, ham, fish like salmon or tilapia or any vegetables like mushroom, broccoli, baby corn etc of your choice to this basic recipe. If adding chicken, use boiled and shredded chicken and saute it in oil with salt and pepper for 2-3 minutes before adding in the rice.If using shrimps, saute them too with salt and pepper for a few minutes and then add in the rice.Not very keen on cooking the rice at home? you can also use the packaged cooked rice which is easily available in most super markets.Try cooking this recipe with different oil like peanut oil, canola oil and sesame oil for a slight change in flavour.
