Haldi doodh (turmeric milk, golden milk) is an Indian drink made with turmeric (fresh or powdered) and milk. It comes together in under 10 minutes in one pot. Here is how to make it.
Heat the milk. Pour milk into a small saucepan over medium-high heat and bring it to a boil. Stir often. Milk scorches at the bottom of the pan within seconds if you walk away, and that burnt taste will ruin the whole batch.
Lower the heat and add the spices. Once the milk boils, turn the heat to low. Stir in turmeric powder and ground black pepper. Cook for 2 to 3 minutes, stirring frequently.
If you are using fresh turmeric, add 2 teaspoons of peeled, grated root instead of powder at this step.
Strain. Pour the milk through a tea strainer into a jug or a large measuring cup. This catches any turmeric clumps, pepper grit, or bits of fresh root.
Sweeten. Stir in honey now, off the heat. Honey goes in after the milk comes off the stove because heating it changes its flavor and, according to Ayurveda, its benefits.
Pour and serve. Pour the hot milk into 2 mugs from a little height. The drop creates a light froth on top, the way chai wallahs do it. Sprinkle a pinch of turmeric on the foam and serve immediately.
