Paneer Fried Rice is an Indo-Chinese style rice stir fry dish where rice is stir-fried with paneer, sauces, and lots of crunchy veggies. Make it at home using my easy recipe.
Add paneer, soy sauce, ketchup, and cornstarch in a bowl and mix well.
Heat oil in a non-stick frying pan over medium heat.
Once the oil is hot, transfer the paneer cubes to the pan and arrange them in a single layer.
Cook for a minute, then flip the pieces and cook for another minute.
Remove the paneer on a plate and keep it aside.
Make The Fried Rice
Add the leftover oil from frying the paneer and an additional 1 tablespoon of oil to a nonstick wok.
Heat over high heat.
Once the oil is hot and shimmery, add onions, ginger, garlic, and green chilies, and sauté until the onions turn translucent.
Add bell pepper, carrots, green beans, and corn kernels, and cook for a minute.
You can blanch the veggies before using them in the recipe if you like them slightly cooked.
Add salt, pepper powder, soy sauce, and rice wine vinegar and mix well.
Now add white rice and toss well.
Separate the rice grains with your fingers before adding them to the wok.
Add the fried paneer cubes and mix well to combine.
Check for salt and pepper and add more if required.
Garnish with green onions and serve hot.

Keep all the ingredients prepared and ready near the stove. You will have to add them to the wok one at a time, and any delay can cause burning.Cook the fried rice over high heat for the best smoky flavor.Do not overcook the veggies; they should retain a little bite.The choice of wok is very important for a great flavor! Use a carbon steel or cast iron wok for the best texture and flavor.
