This Cucumber Avocado Salad is a delicious combination of my Summer favorites, Cucumber and Avocado, flavored with a simple zesty dressing. Here is how to make it.

About Cucumber Avocado Salad

As summer approaches, the blog will be filled with fresh, wholesome salad recipes. As much as I love eating salads with different flavors, I also enjoy making and experimenting with them at home. One of my favorites is Cucumber Avocado Salad.

Cucumber and Avocado Salad is a refreshing summer salad with all the goodness of cucumber, avocado, red onion, and tomatoes.

This colorful salad can also be eaten as a snack in between meals or whenever hunger strikes. I sometimes like to make this salad with basil too, as it gives it a more refreshing flavor.

This wholesome and hearty salad is flavored with a simple, fast dressing made with just 5 ingredients. Easy and quick, right? This salad can be packed for your lunchbox, too.

Ingredients

For the Salad – You will need red onions, cherry tomatoes, cucumber, and avocado.

You can experiment with the salad and add in other seasonal ingredients such as Mango, Strawberries, Quinoa, Edamame, Radish, Feta Cheese, Spinach, Lettuce, Artichoke, Chickpeas, etc.

If you want to make a non-vegetarian version of the same, you can add shrimp, Crab, Tuna, etc.

For the Dressing, you will need extra-virgin olive oil, lime juice, cilantro, salt, and pepper.

If you like, you can also add a little finely chopped garlic for that extra flavor. Also, always use a good quality extra virgin olive oil for the best taste.

How to check for ripe Avocado?

Usually, Ripe Avocados are darker in color, but the color may vary, so it is best to go by feel as well as color.

Press the avocado with your fingers; if it feels slightly soft, it is ripe and ready to eat. But if it feels mushy, the avocado is not great to include in the salads, or if it feels too hard, it is still raw.

Which Cucumber is best to use for this salad?

English Cucumbers are the best to use in this Avocado Cucumber Salad. However, feel free to use any variety.

How to prevent Avocado from blackening after you cut them?

If you want to prevent avocados from blackening after cutting, just toss them in some lemon juice.

How to make a Mexican variation?

This Avocado Cucumber Salad is very similar to the Mexican Avocado Salad. In addition to these ingredients, you just need to add some grilled corn kernels to the salad. In the dressing, you can also add a little honey for a hint of sweetness. And yes, do not forget to top the salad with some Cojita Cheese.

Serving Suggestions

I like to have this Cucumber, Tomato, and Avocado Salad on its own, or sometimes I serve it as a side dish with my Brunch meals. You can also serve it along with Pasta and Risotto of your choice.

It also tastes great as a side dish along with your Grilled Meat or Seafood recipes. It is a versatile salad that can be served with anything you prefer.

You can also serve a slice of homemade bread or garlic bread on the side.

This Cucumber Avocado Salad is a delicious combination of my Summer favorites, Cucumber and Avocado which is flavored with a simple zesty dressing. Here is how to make it.

Ingredients 

  • 2 cups English cucumber (cubed)
  • 1 Avocado (peeled and diced)
  • ½ cup Red Onion (sliced)
  • 1 cup Tomato (cubed)

*For Dressing:

  • 2 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Lemon Juice
  • ¼ cup Cilantro (chopped)
  • Salt (to taste)
  • Black Pepper Powder (to taste)

Instructions 

  • Mix the salad ingredients in a bowl.
  • Mix dressing ingredients in another bowl.
  • Pour the dressing over the salad and toss well.
  • Serve immediately.
