We always try and add in a few extra veggies to ensure that our kids get enough of the goodness of fresh veggies masked in the deliciousness of the perfect creamy pasta.
Sometimes, it can get a little boring for them if you continue to try the same old recipe, so today I’m bringing to you a delicious Garlicky Roasted Red Pepper Pasta recipe that’s full of the pungent flavour of garlic with the lovely charred flavour of the red bell peppers.
This roasted pasta recipe is sure to become a hit among those who have a special affinity for Italian food.
Goes without saying that this recipe is rather simple to make and something you just can’t go wrong with.
It’s very common for us in India to overcook the pasta, this is something I’ve noticed in most restaurants, but the key to making an absolutely gorgeous pasta is to cook it till it’s al dente, no more, no less.
Next, for this recipe, the pasta is to be drained and this roasted red pasta recipe requires you to char the red peppers and deseed it to give it a lovely strong flavour and aroma.
After this, the softened peppers are mixed with garlic and onions.
This mixture is then blended in the mixer until it gains a smooth luscious sauce-like consistency.
Finally, this mix is added with vegetable stock, salt, sugar and a pinch of pepper for that extra tinge of fiery heat.

Step by Step Recipe
Cook the penne pasta until done. Drain and keep aside.
Wash the red bell peppers and pat them dry. Roast them on direct flame until charred. Remove and let cool.
Heat butter in a pan.
Add onion and garlic and cook for 2-3 minutes.
Peel the skin of the peppers and discard the seeds.
Chop the flesh roughly.
Add the peppers and cook for another minute.
Remove the pan from heat and let the mixture cool. Grind the mixture to make a smooth puree.
Transfer the red pepper paste in the pan.
Add vegetable stock, salt and black pepper powder.
Add the cooked paste. Cook for 3-4 minutes.
Add fresh cream and basil and mix well. Sprinkle parmesan cheese on top. Serve hot.

Ingredients
- 300 g Penne Pasta
- 300 g Red Bell Pepper
- 2 tbsp Butter
- ½ cup Onion (Chopped)
- 2 tsp Garlic (Chopped)
- 1 cup Vegetable Stock
- Salt to taste
- ½ tsp Freshly Cracked Black Pepper
- ¼ cup Fresh Cream
- 3 tbsp Fresh Basil (Chopped)
- 2 tbsp Parmesan Cheese (Grated)
Instructions
