Chickpea, Avocado and Feta Salad is mostly made as an accompaniment whereas Avocado and Peach Salsa is prepared out of my love for stone fruits every season. But, when I recently relished Avocado Lentil Salad at a food festival, my taste buds literally pleaded me to try it from scratch!
Made from Masoor and ripe Avocados, Avocado Lentil Salad can be granted a more soothing flavour by an addition of fresh greens and orange wedges. As I always believe in eating salads with my meals, I feel they can be made healthy as well as delicious by tossing them along with a proper dressing.
That’s why for Avocado Lentil Salad, I made sure to use a refreshing dressing as well. Just a pinch of orange zest, a dash of lemon juice, virgin olive oil, orange juice and some freshly cracked black pepper, was all I needed to make the dressing for Avocado Lentil Salad.
