We went to a strawberry farm to pick strawberries during our stay in LA and returned with 3 lb of fresh berries. We snacked on some, and I froze some, but quite a few were still left. That’s when I worked on this strawberry cobbler recipe.

I have modified and updated the recipe with better pictures and step-by-step instructions, but it still tastes exactly how it tasted 14 years ago.

It is comforting and refreshing, with the strawberries’ slightly tart flavor balancing the batter’s sweetness. The golden crispy crust and the gooey sweet fruit inside—what’s not to love?

My easy homemade strawberry cobbler recipe can be made using fresh or frozen strawberries. However, I would love to make this great dessert in summer when it’s strawberry season, and the best strawberries are available.

This delicious dessert is perfect for get-togethers, house parties, or everyday after-meal desserts. Serve it with whipped cream or vanilla ice cream.

Ingredients

For The Filling

You will need strawberries, lemon juice, cornstarch, and sugar to make the Strawberry Filling.

Select fresh, red, and juicy strawberries for the best taste. Try to buy the strawberries from a farmer’s market instead of a grocery store, they are much butter in taste.

You can also go for frozen strawberries. Just thaw them to room temperature before using them in the recipe.

Use only freshly squeezed lemon juice for the best flavor.

For The Topping

To make the crust on top, you will need all-purpose flour, granulated sugar, vanilla extract, baking powder, salt, unsalted butter, and milk.

How To Make Strawberry Flavored Cobbler

Preparation

Start by preparing 1 pound (500 g) of strawberries. Wash them with water to remove dirt, and then chop off the top part with the green leaves. Now, chop the strawberries into small pieces. If using frozen strawberries, thaw them to room temperature and then chop them.

Preheat the oven to 180°C (360°F).

Grease an 8×8-inch baking tray with butter.

Make The Topping

Stir together the following ingredients in a medium-sized mixing bowl until smooth.

  • 1 cup all-purpose flour
  • ยฝ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ยผ teaspoon salt
  • 4 tablespoon melted butter
  • ยพ cup whole milk

Set aside.

Assemble The Cobbler

Add the chopped strawberries to the prepared baking tray.

Add the following ingredients to the tray and mix well using a spoon.

  • ยฝ cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch

Pour the topping over the strawberries and spread evenly using a spoon.

Bake The Cobbler

Keep the baking tray in the middle rack of the oven and bake for 30-35 minutes until the top is lightly browned and crispy.

The ready cobbler will have the dough rising to the top, forming a gorgeous crust and gooey strawberries popping through.

Remove the pan from the oven.

To serve, scoop out a large spoonful of warm cobbler and transfer it to a serving bowl. Top with a scoop of vanilla ice cream and serve immediately.

You can make a sugar-free version by replacing granulated sugar with Splenda. Instead of granulated sugar, you can also use unprocessed brown sugar, coconut sugar, jaggery, etc..

  2. When making the strawberry cobbler using cake mix… Do I add the dry cake mix on top of strawberries, or do I make the cake mix as the directions on the box say to make it, and then add it on top of strawberries?
