When making these at home, you can also customize the recipe. Increase the nuts you like and decrease the ones you don’t. You can also make this recipe with a single nut, such as almonds or cashews.
This honey roasted nuts recipe is vegetarian and gluten-free, and you can easily double or triple the recipe as per your requirements.
Ingredients
Nuts – You can use any unsalted nuts you like. I used a mix of cashews, almonds, walnuts, and pistachios. Hazelnuts, pecan halves, and raw peanuts also work fine.
You can also add sunflower seeds, pumpkin seeds, flax seeds, hemp seeds, etc to this mixture.
Honey is a great option for adding sweetness to nuts. It also adds a sticky texture, making them even more delicious. My favorite honey brands are Busy Bee and Manuka.
Butter – Use unsalted butter for richness.
Brown Sugar – To add sweetness and crunch, sprinkle some brown sugar on top at the end of the cooking. Brown sugar also prevents the nuts from sticking together after baking. You can also use raw cane sugar if brown sugar is unavailable.
Cayenne Pepper and Sea Salt – These two add spicy and salty flavor that complements the sweetness of honey and brown sugar well.
You can also sprinkle a little ground cinnamon over these munchies, or add a little vanilla extract along with honey.
How To Make Honey Roasted Nuts
Step 1: Preheat the oven to 300°F (150°C).
Step 2: Line a large sheet pan or baking sheet with parchment paper or spray it with cooking spray.
Step 3: Add 2 tablespoon unsalted butter and 2 tablespoon honey to a medium-sized saucepan. Heat over low heat until the butter is melted and combined with the honey, stirring frequently with a wooden spoon or a silicon spatula.


Step 4: Add 2 cups of mixed nuts and ยฝ teaspoon cayenne pepper to the pan and evenly coat the nuts with the butter and honey mixture.


Step 5: Transfer the nuts to the prepared baking sheet and spread them in a single layer using a silicone spatula.

Step 6: Keep the sheet in the middle rack of the oven and bake for 20 minutes until the nuts are golden brown.
Step 7: Stir them halfway through baking so they roast evenly on all sides.
Step 8: Remove the sheet from the oven and sprinkle 1 tablespoon brown sugar and ยฝ teaspoon sea salt (or kosher salt) over the nuts. Toss them using two spatulas.
Step 9: Let the nuts cool for 2-3 hours, so they are no longer sticky.
Step 10: Transfer the honey-roasted nuts to an airtight container and munch on! It is totally fine if the nuts are in small clusters and not separate.

- 2 cups mixed nuts (I used a mix of almonds, walnuts, pistachios and cashew nuts.)
- ½ teaspoon cayenne pepper
- 1 tablespoon brown sugar
- ½ teaspoon sea salt
Instructions
- Preheat the oven to 300℉ (150℃).

- Add nuts and cayenne pepper to the pan and coat the nuts with the butter and honey mixture evenly.
- Transfer the nuts to the baking sheet and spread them in a single layer using a silicone spatula.
- Keep the sheet in the middle rack of the oven and bake for 20 minutes until the nuts are golden brown in color.
- Stir them once so that they roast evenly from all sides.
- Remove the sheet from the oven and sprinkle brown sugar and sea salt over the nuts and toss them using two spatulas.
- Let the nuts cool down for 2-3 hours so that they are not sticky anymore.
- Transfer them to an airtight container and store them at room temperature for 5-6 days, refrigerate for 10-12 days or freeze for up to 6 months.





Easy recipe and delish!! I used roasted,unsalted pecans and cashews and added more cashews than the 2 cups mentioned in recipe. Omitted cayenne pepper. I found the nuts were a bit sticky/tacky when eating even after 3 hours. Maybe Iโll try sprinkling with white sugar next time.
I get many requests to make these! They’re so good! I do add a tiny shake of cinnamon but that’s personal preference. I’m thrilled that I don’t have to separate an egg. This is the perfect nut recipe
