Kaddu ka Raita or Pumpkin Raita is a unique recipe and a little different from other raita recipes.

It beautifully combines the slight sweetness of the fresh pumpkins or kaddu with cumin, the creaminess of the yogurt. It’s a delicious and light accompaniment to have with any dish in place of spicy curry and this is one recipe that can be made really quickly.

Moreover, the flavor of Pumpkin blends so well with yogurt that nobody realizes that they are eating Kaddu Raita.

As Pumpkin Raita goes very well with all the Indian meals, you can prepare it for elaborate family dinners or make it for your office lunch!

Pumpkins are loaded with Vitamin A and dietary fibers and are also a good source of minerals, amino acids, so this raita is a great way to incorporate all these nutrients into your diet.

Ingredients

Kaddu ka Raita Ingredients.

Kaddu – Kaddu or Pumpkin is a vegetable loaded with nutrition. And this Raita is a great way to include it in your everyday meals. Kaddu is peeled and grated and then boiled before adding to the Raita. Use ripe yellow pumpkin for the best result.

Yogurt – Yogurt is whisked well before mixing with other ingredients. Either you can make fresh yogurt at home or use the store-bought ones.

You can also add a little milk/water to thin out the yogurt if it is too thick. Taste the yogurt before making the Raita. If it turns out sour, the raita won’t taste good.

Green Chillies and Fresh Coriander – While green chilies add a little spiciness to this Raita, Fresh Coriander adds a refreshing taste and beautiful color to this simple Raita.

You can adjust the amount of green chilies as per your spice. If making for kids, you can skip adding green chilies too.

Seasonings – To flavor it up more, we will also add salt, roasted cumin powder, and red chili powder.

How to make Kaddu Ka Raita?

Start by preparing the pumpkin. We need 1 cup of grated pumpkin, so buy approximately 300 grams slice. Wash the pumpkin slice and peel the skin using a sharp knife. Grate it using the medium hole of the box grater. Boil 3 cups of water in a pan.

When it comes to a rolling boil, add 1 cup of grated pumpkin and cook for 4-5 minutes on medium heat.

Strain the pumpkin using a soup strainer and let it cool for sometime. You can use the leftover water to knead the dough or add it in the curries.

Whisk 2 cups of yogurt in a medium size mixing bowl using a wire whisk.

Add salt to taste, ¼ teaspoon roasted cumin powder, ¼ teaspoon red chili powder, 1 teaspoon chopped coriander, and 1 teaspoon chopped green chili, and mix well.

Add the cooked pumpkin to the bowl and mix well. Garnish with coriander, chilies, and red chili powder.

How to make Tadka Kaddu Raita?

Once you prepare the Raita according to the recipe, you can temper it with an oil tadka.
To temper it, heat oil in a small pan.

Add mustard seeds, cumin seeds, and curry leaves, and let the seeds splutter. Add red chili powder. Now add the tadka to the Kaddu Raita and give it a mix. Serve with your everyday meals.

Serving Suggestions

Serve this raita as a side dish with your everyday meals, which is a Curry, Dal, Roti, and Rice. I also like to include this Raita in my festive and special meals.

This raita also tastes great along with Khichdi, Tehri, Pulav or even Biryanis.

You can also serve it with Stuffed Parathas such as Aloo Paratha, Broccoli Paratha, or any Paratha of your choice.

Storage Suggestions

I would recommend you to make this Raita fresh. But if you have leftovers, it will last for a day in the refrigerator. Store it properly in an airtight container.
