    About No Breading Air Fryer Zucchini

    This No Breading Air Fryer Zucchini is an easy, quick and healthy side dish made using minimal oil and no flour.

    This recipe is vegetarian, low carb, gluten-free, and keto and can be easily doubled or tripled as per your requirements.

    Serve it on the side with your everyday meals, include it in your buddha bowls, or enjoy it as a healthy snack with your favorite dipping sauce.

    Ingredients

    Air fryer zucchini no breading ingredients

    This recipe uses simple ingredients which are easily available in any grocery store.

    Zucchini – Use fresh zucchini with dark green smooth skin and free of any cuts, bruises, or blemishes.

    Extra Virgin Olive Oil – I prefer to use extra virgin love oil, as it lends a beautiful mild flavor. You can also use avocado oil, grapeseed oil, or vegetable oil.

    Parmesan Cheese – Use fresh or bottled grated parmesan cheese for this recipe.

    Seasonings – This air-fried zucchini is flavored with a seasoning blend prepared with garlic powder, onion powder, pepper powder, salt, red pepper flakes, and salt.

    You can adjust the seasonings as per your taste.

    You can also use Italian seasoning, taco seasoning, or lemon pepper seasoning to season the zucchini.

    To make the zucchini crispier, add some panko breadcrumbs to the seasoning mix. It will absorb the excess moisture making the air fryer zucchini chips super crispy.

    How To Make Air Fryer Zucchini (No Breading)

    Rinse 2 medium-sized zucchini (approx 1 pound) and pat them dry using a kitchen cloth.

    Cut the zucchini into even bite-sized (½-inch) pieces and set them aside. I have cut the zucchini into a half moon shape. There is no need to peel the skin.

    Add 1 teaspoon garlic powder, ½ teaspoon onion powder, 1 teaspoon black pepper powder, ½ teaspoon salt, ½ teaspoon red pepper flakes, 2 tablespoon grated parmesan cheese, and zucchini pieces to a medium mixing bowl.

    Toss to coat the zucchini with the spices.

    Everything mixed well.

    Add 2 tablespoon extra virgin olive oil to the bowl and toss well.

    Preheat the air fryer to 400F (200C) for 5 minutes.

    Transfer half of the zucchini slices to the air fryer basket and spread evenly.

    Air fry for 6-8 minutes till it looks nicely roasted and is cooked.

    You can shake the basket midway for even cooking.

    Air fry the remaining zucchini in the same way. The second batch might take a minute less to cook.

    Drizzle some lemon juice on top and serve hot as a vegetable side.

    Pro Tips By Neha

    If you like the zucchini to be cheesier, add some more grated parmesan cheese towards the end of cooking.

    The air frying time may vary if you cut the zucchini in a different shape or size.

    Adjust the pepper and red pepper flakes as per the heat you want in the recipe.

    If you are looking for low oil cooking then skip using oil in the recipe and just sprinkle a few drops of water on the zucchini to allow the spices to adhere to it.

    Storage Suggestions

    These No Breading Air Fried Zucchini tastes the best when served right out of the air fryer. Leftover zucchini can be stored in an airtight container in the fridge for 4 days, once they cool down to room temperature.

    To reheat, place the zucchini on a baking sheet in a single layer and heat at 400F for 3-5 minutes. You can also reheat them in an air fryer.

    Do not freeze as the zucchini will become soft and soggy once thawed.
