Be it especially during the summer or during the afternoons, we do feel like drinking something soothing and cool, right? Well, that’s the reason why I make Kesar Elaichi Lassi, a huge batch of coolers, Jal Jeera, Sattu Ka Namkeen Sharbat and store them in our refrigerator every now and then.
Coming back to Kesar Elaichi Lassi, I like it more as yogurt has cooling properties and is also good for the stomach as it has probiotic qualities. It has this distinct flavor of saffron, cardamom which blends along perfectly with yogurt.
Moreover, this Lassi is very easily made, all you need to do is assemble all the ingredients in a blender and give it a nice mix and this creamy delight is ready to be served! You can make this lassi in big batches and refrigerate it. Just mix it nicely just before you serve it and add on the garnishing.

Kesar Elaichi Lassi

- 500 g Plain Yogurt
- 3 tbsp Sugar
- 10-15 strands Saffron Soaked in 2 tbsp warm milk
- 1/2 cup Full Fat Milk Chilled
- 1/2 tsp Cardamom powder
Soak the saffron strands in warm milk and keep aside for 15-20 minutes.
Add all the ingredients including the saffron soaked in milk in a blender and whisk well.
Pour the lassi in glasses.
Garnish with Almond and pistachio slivers.
